Here’s a Father’s Day Special Recipe by Executive Chef of The Metropolitan Hotel & Spa that’s hearty, flavorful, and perfect for celebrating.

MANGO LASSI

INGREDIENTS                                    QUANTITY

 Curd                                                            150 ml

Ripe Mango                                               1

Sugar                                                           50 gm

Water                                                          75 ml

METHOD:

Take curd in a blender, add mango pulp, sugar to the curd and add water to it. Blend it well until it is smooth to drink. Serve it cold

SALMON SANDWICH

INGREDIENTS                             QUANTITY

 Bread                                                  2 slices

Smoked Salmon                                 90 gm

Amul cheese slices                               4 no.

Mayonnaise                                        10 gm

Lettuce                                               10 gm

Black Pepper                                       to taste

Dill                                                       2 gm (chopped)

METHOD:

Take 20 gm of salmon in a blender and blend fine. Add this to the mayonnaise, followed by pepper and dill. Mix well. This will be used as a sandwich spread. Cut bread into two lengthwise diagonally. Toast lightly and apply some spread on both the cut pieces. On one slice, put smoked salmon, followed by cheese slice rolls and put another cut of sliced bread on top like a sandwich. Serve warm along with French-fries and mustard.

AVACADO CHICKEN SALAD

INGREDIENTS                                        QUANTITY

Finely chopped cooked chicken                       1 cup

Riped avocado (seeded and peeled)                  1

Apple, peeled, cored and finely chopped          1

Finely chopped celery                                       ¼ cup

Finely chopped red onion                                 ¼ cup

Finely chopped cilantro or parsley                    2 tbsp.

Lime Juice                                                         2 tsp

Or Lemon juice                                                 1 tbsp.

Salt                                                                     ½ tsp

Freshly ground black pepper                               Pinch

Sandwich breads or salad green                         as per required

Olive oil                                                            as per required

METHOD:

Put chicken, avocado, apple, celery, and red onion in a medium bowl. Gently mash the avocado with a fork and stir it around so that everything gets well mixed. Add the cilantro or parsley, lime juice or lemon juice, salt, and pepper. Add more lime juice or salt to taste. If the mixture seems a little dry, you can stir in a teaspoon or two of olive oil.

To store, put the prepared salad in a bowl and cover completely with plastic wrap so that no part of the chicken salad is exposed to air. Put this salad in the fridge for a longer shelf life. This can be eaten in various ways. Serve on sandwich bread or toasted bread, or you can add more salad green for that crunchy, healthy bite. Celebrate this Father’s Day with Health & Happiness.

TOFU MESHWI

INGREDIENTS                                      QUANTITY

Tofu                                                                200gm

Tomato                                                              1

Yellow capsicum                                                1

Green Capsicum                                                1

Garlic                                                               15 gm

Paprika                                                              3 gm

Carom seed                                                        2 gm

Salt                                                                  to taste

Black pepper crushed                                      a pinch

Mayonnaise                                                       30 gm

Olive oil                                                             30 ml

Sumac (substitute: lemon zest or lemon juice)      5gm

METHOD:

Dice tofu, clean and wash the tomato and peppers. Cut into 2 inches. Discard seeds and pulp then make a marinade with mayonnaise, chopped garlic, paprika, carom seeds, sumac and seasoning. Marinade tofu and vegetables and keep aside for 30 minutes. Skewer and grill in a tandoor. Serve hot and enjoy ..
